Baked Amity Langoustine with mayonnaise

For the baked langoustine

  • 4 whole Amity langoustine
  • 1 tbsp olive oil
  • half a lemon, viagra 40mg juice only
  • salt and freshly ground black pepper

For the mayonnaise

  • 1 tsp white wine vinegar
  • 1 tsp smooth Dijon mustard
  • salt and freshly ground black pepper
  • 2 free-range egg yolks
  • 200ml/7 fl oz vegetable oil
  • 100ml/31/2 fl oz olive oil

1. Preheat the oven to 200C/400F/Gas 6.
2. To bake langoustine, place the washed langoustine onto a large piece of aluminium foil on a baking sheet. Drizzle with oil, squeeze over the lemon juice and wrap up the foil to completely seal. Transfer to the oven and bake for 10-15 minutes or until completely cooked through.
3. To make the mayonnaise, whisk a splash of water with the vinegar, mustard, salt and freshly ground black pepper until all dissolved. Add the egg yolks and whisk in. Add the vegetable oil; drop by drop, then the olive oil. Whisk slowly until emulsified.
4. To serve, place the baked langoustine with a lemon garnish and serve with mayonnaise.
